Tuna Cakes

Made with tuna, chicken-flavored Stove Top stuffing, cheddar cheese, shredded carrots, mayonnaise, sweet pickle relish, onions, scallions, egg, and water.

These are one of my absolute favorites to eat for a snack.  I could eat these tuna things all day long—and they’re so easy to make.

I actually made this from a combination of two different recipes—one was called Tuna Cakes, the other Tuna Croquettes.

Done in no time.

So, if you have nothing else to do today, try making tuna cakes for a snack or even for lunch.

Take-Away Life Lesson:  Keep your distance from your friends and family while you eat these.  You’ll have tuna breath for a while.

Red Beans & Rice

Red Beans & Rice

Made with sliced smoked turkey sausage, chicken stock, red beans, canola oil, chopped onion, celery, green bell pepper, minced garlic cloves, dried thyme, dry rub (made of sugar, paprika, onion powder, salt & pepper), bay leaves, and salt & pepper; served over long grain brown rice.

I’ve never loved beans and rice so much in my life!!!  This was SO good.  I think the sausage is what really set it off.

So, if you have nothing else to do today, keep yourself occupied with a fabulous dish of red beans and rice.

Take-Away Life Lesson:  Smoked sausage can do wonders for red beans and rice and make it a lovely hearty dish.

Roast Turkey, Fennel & Onions

Roast Turkey, Fennel & Onions

Made with roast turkey breast, extra-wide egg noodles, white wine, chicken stock, Parmigiano-Reggiano cheese, heavy cream, extra-virgin olive oil, chopped fresh thyme leaves, sliced garlic cloves, fennel bulbs, onions, flour, fresh flat-leaf parsley leaves, salt & pepper, and topped with pine nuts.

I don’t know what to say other than it did not make the cut into my recipe binder.  It was ”meh” at most for me.

Recipe for—Roast Turkey, Fennel & Onions with Buttered Egg Noodles

So, if you have nothing else to do today, find a way to turn a “meh” meal into an OMG meal.

When The Dairy Queen Blizzards Went BOGO

Well, HOT DOG!!  Can life get any better than this?  I can just thank my lucky stars for this deliciousness of a good deal.

It’s a “Buy One, Get One Blizzard for 99 Cents” ALL MONTH at Dairy Queen—and that’s ANY size!  That’s cheap considering the normal price of one of these little homies.  All right, all riiiiiight.  Can I get a fist bump?

(DQ may have just swindled and pimped its own self without any realization.)

I’m telling you, the universe is aligning for me at just the right moment I really needed it to.  Who doesn’t love a BOGO sale?  At this rate I can get a set of these every other day and be set the rest of the month.

So, if you have nothing else to do today, go to your local Dairy Queen and take advantage of the Blizzard sale.  You’re gonna fall in luuuuuvvvv.

Take-Away Life Lesson:  Never give up hope that the stars and universe will never align for you—because I’m living proof that it eventually does.

Made with new red potatoes, Vidalia onion, red bell pepper, smoked paprika, olive oil, salt & pepper, fresh parsley, and homemade BBQ seasoning (made from paprika, sugar, and onion powder).

I’m not even going to begin to tell you how many servings I think this will feed because you’ll think I’m a pig (not that you already don’t from previous posts).

Made with russet potatoes, Vidalia onion, fresh chives, turkey bacon, salt & pepper, and butter.

If the skillet weren’t so hot at the end of the cooking process, you could just put it in your lap and have at it.

So, if you have nothing else to do today, immerse yourself into some homemade fried potatoes.  Smell, live, breathe, and eat fried potatoes all day today.

Take-Away Life Lesson:  McDonald’s fries can’t even compare to homemade potatoes ANY day of the year.

Chicken Teriyaki

Chicken Teriyaki

Made with diced chicken tenderloins, broccoli, cauliflower, carrots, kale, firm tofu, sliced red onions, celery, mushrooms, yellow onions, sweet Vidalia onions, scallions, bean sprouts, and teriyaki sauce; served over brown rice.

I just loved eating this for dinner and it was all due to the teriyaki sauce.  That sauce can make anything taste yumalicious!

Just put some assorted vegetables inside a pan and throw a bottle of teriyaki sauce all over them.  Yet another way to love life!

Teriyaki Sauce

I discovered this lovely sauce at the health food store, but later found out you can get this exact bottle at Wal-Mart for at least one dollar (if not more) cheaper.

So, if you have nothing else to do today, try throwing some teriyaki sauce over your favorite meats and vegetables and love every minute of it.

Take-Away Life Lesson:  If Wal-Mart is selling the exact product as your local health food store, it’s probably going to be cheaper at a Wal-Mart.

Vegetable Pizza To Love

Vegetable Pizza

Made with organic whole wheat pizza crust, pizza sauce, mushrooms, green & red bell peppers, onions, tomatoes, mozzarella cheese, Monterey Jack cheese, 5-cheese Italian, sharp cheddar cheese, and pizza seasoning.

I just LOVE a homemade pizza.  There’s nothing like homemade.  BUT I had no patience to make my own pizza dough—so the dough is store-bought from Whole Foods.

I just layered and lumped all the ingredients together and called it a day.  Notice that it’s not even flat like most pizzas.  I had to make a HUGE MOUND of veggies and cheese.  It’s a mini-mountain.

There was nothing to making this and the reward was a lot of pizza cheesy gooey goodness all for me!  I just sliced it right down the middle both ways for 4 huge slices of love.  With slices that big you need two hands or a fork and knife.  All that matters is that it ends up in your mouth.

So, if you have nothing else to do today, try making your own homemade pizza.

Take-Away Life Lesson:  Always save yourself some time if you need to by buying store-bought pizza dough.  If you have the time and the patience, I’d highly suggest making your own dough from scratch though.
