Made with spaghetti, turkey bacon, extra-virgin olive oil, garlic cloves, chickpeas, fresh parsley, pepper, and Parmesan cheese.

Yes, it’s yet another pasta dish.  What can I say?  I adore pasta and a lovely dish this was.  But instead of putting pancetta in it like the recipe called for, I put turkey bacon into mine.

Sometimes when a recipe calls for either pancetta and prosciutto, I’ll substitute.  The first time in my life that I ever shopped for pancetta and prosciutto at my health food store specifically for recipes I wanted to make, I didn’t realize these items cost close to $5278.99 per pound!!!

So once I realized I could easily use bacon instead of pancetta and ham instead of prosciutto—I went this route with substitutions in recipes.  NOT every time, mind you—but for the most part.  Once every triple blue moon, I will splurge on these fancy meats when I’m feeling a bit gutsy and adventurous.

So, if you have nothing else to do today, I dare you to take out a bank loan for half a pound of pancetta and a quarter pound of prosciutto.

Take-Away Life Lesson:  Bacon can be a great substitute for pancetta and ham can be a great substitute for prosciutto if you’d rather not take out a home equity loan for these items.

Lemon-Garlic Cream Fettuccine

Made with lemon peel, fresh parsley, minced garlic cloves, fettuccine, butter, onion, heavy whipping cream, salt & pepper, cream cheese, lemon juice, plum tomatoes, and Parmesan cheese.

I had my reservations about making another “Taste of Home” recipe, but this little pasta dish actually turned out rather good.  Previous dishes I’ve chosen to make from “Taste of Home” weren’t much to write home about, but I decided to give it another try.

This was full of creaminess that covered each and every noodle.  You can really taste the lemon and garlic in this dish.  Adding Parmesan cheese on top is just the way to finish it off.  I made plenty of this stuff so I’m set for lunch/dinner for the next few days.

So, if you have nothing else to do today, make yourself a fabulous noodle dish full of creamy goodness—and don’t forget to load it with lemon and garlic.  The flavors are marvelous.

Take-Away Life Lesson:  A big pot of noodles is all you need to comfort your stomach.

The Leftovers Are Just As Amazing

Mac & Cheese Leftovers

This mac & cheese was SO good even several days later.  I decided this would be my lunch for work every day this week.  I just love when I can make a big dish of something and have it last all week.

Oh, I wish you could have just smelled the wonderful smells permeating from this bowl when I pulled it from the microwave, walked back to my desk, and slowly lifted that lid for all the steam to swoop out and travel around the office.  Who am I to deny my fellow co-workers the lovely smells of life?

Of course, all those around me were wondering where that glorious smell was coming from.  That smoked cheddar really does wonders in the smell and the taste department.  Someone even thought there was bacon in it even though there’s not.  No—it was probably the smoked cheddar they were smelling.  Just keep your distance from my desk and stay away from my food!

I oooo’ed and ahhhh’ed my way through lunch and couldn’t wait for a second helping at home for dinner.

So, if you have nothing else to do today, enjoy your leftovers at home, at work, or wherever.  Let others get a chance to whiff those glorious smells coming from your lovely leftovers.

Take-Away Life Lesson:  Guard your food with your life as others are walking past trying to discover where those delicious food smells are coming from.  You never know when you’ll have to fight to the death.

I Can't Get Enough Of Macaroni & Cheese

Made with Cavatappi pasta, sharp cheddar cheese, pepper jack cheese, smoked white cheddar cheese, Gouda cheese, milk, salt & pepper, red pepper flakes, Cheez-Its, and Parmesan cheese.

Well, Miss Nancy of “Feasting With Friends” had to go showing off macaroni and cheese in my face as if I haven’t had enough of it already.  And it looked marvelously good.  It’s all I could think about since she posted it to her blog.

So I had no other choice but to hop my way to the grocery store to get said ingredients.

Because Nancy suggests NOT using pre-packaged cheeses, my right arm is now 10 times the size of my left arm with all the grating I had to do.  Yeah, there were lashings of cheeses all over the place once the shredding was done—but I’m not complaining.

Once all the cheeses melted into the milk, it was drenched all over the pasta.

Now it’s ready for baking in the oven.  I didn’t make mines quite as soupy as Nancy did and I had much bigger hunks of Cheez-Its for the topping.  It turned out OH SO DELICIOUS!

Thank you, Miss Nancy for shoving mac & cheese in my face!  It made my day.

Recipe for—Nancy’s Macaroni & Cheese

So, if you have nothing else to do today, try either making or eating some homemade macaroni and cheese—or both.  If for no other reason than the love of cheese.

Take-Away Life Lesson:  Apparently grating lots of cheese for a long period of time can give your one arm that Incredible Hulk look—which basically puts weights/dumbbells out of business.  Don’t forget to switch off arms lest you walk around with one skinny arm and one bulky arm.

Chicken Noodle Soup For The Throat

Chicken Noodle Soup

When you feel like the dickens, you definitely don’t want to cook and you barely want to eat.  A scratchy sore throat, achy body, and stuffy nose wants nothing more than some hot chicken noodle soup at 500ºF immediately, if not sooner.  Oh, the agony.

I opened the box, dumped it into the pan and while waiting for the heat to kick in I decided to peruse the soup box.  Wow!  The soup inside the pan and the soup on the box did not look exactly the same colorwise.

Where are they getting all that ‘green’ color in the picture on the box from?  No, seriously?  I didn’t see it inside the pan at all.  Then I figured to be fair, hmmm, maybe it needs to be inside an actual bowl like in the picture before you see it or before it looks that scrumptious.

As you can see, the bowl made no difference whatsoever.  Though the soup was good, please don’t deceive me with pretty pictures on a box with unrealistic contents that are nowhere to be found.

(I tell ya, it’s the little things you notice when you have a lot of time on your hands feelin’ like the dickens.)

So, if you have nothing else to do today, inspect all your food packaging in comparison with the actual contents on the inside. That should make for an interesting day.

Take-Away Life Lesson:  Things are not always as they seem apparently.
