Meatloaf freezes well. Not sure if the mayo would separate, but I’d guess not since it would be incorporated into the whole of it. I cut squares (for two) and freeze in separate bags for trotting out on nights when a baked potato and a nice veggie are all I want to fool with for dinner.

Never tried mayo in meatloaf, but it probably makes it moist.
