Recipe for—Scrambled Eggs with Yogurt & Chives (Colin Cowie)
6 eggs
1/4 cup nonfat milk
2 tbsp. butter
2 tbsp. nonfat plain yogurt
2 tbsp. sliced chives
Salt & pepper
Whisk the eggs and milk together in a bowl. In a large skillet, melt the butter over medium heat. Pour in the eggs, reduce heat to low and cook, stirring frequently with a wooden spoon until soft curds form. Stir in the yogurt, chives, salt & pepper and remove from heat. The eggs should be soft and creamy.
Makes 4 servings.
Made with cream cheese, turkey bacon, Parmesan cheese, onions, fresh parsley, milk, and crescent dinner rolls.
