Mashed Potatoes with Kale

Made with russet potatoes, kale, minced garlic cloves, butter, onion, chicken broth, Mascarpone cheese, Parmesan cheese, extra-virgin olive oil, and salt & pepper.

Be still my heart!  Can you marry mashed potatoes?  Oh yeah, baby!  Can I just say—these were SO SO SO good that I just plopped a big bowl of these in my lap and ate ONLY this for lunch.  This was all I needed.  I ate like I would never see mashed potatoes again.  This was such a great recipe.  Thumbs up.

These are now officially my go-to mashed potatoes to make unless and until I can find something else to top these.

  1. Every time I heard “Kale”, I got curious. I have not found it here, even the big supermarket that sells imported goods does not have it.
    Well, I’ll just eat something else and hope that I’ll find it one day! 😀

  4. Can’t improve on that combination of goodies! I bought some Tuscany kale today that will find its way into angel hair, and who knows what all by the time I’ve finished. Chicken bone broth cooling on the stove, so some of that will no doubt find its way into dinner tonight.
