Oh, my.  Look what I found in the cupboard just waiting for me which was technically meant to be made for Thanksgiving but never was!  A pumpkin pie and a gingerbread mix for little ol’ me?  Oh, yeah.

I was definitely not in the mood to make these from scratch today—but when I saw the can and box in the cupboard I knew I had enough energy to throw a couple of eggs into a bowl and stir.

I just love gingerbread.  I didn’t mean to eat the whole cake today—it just kind of happened.  You know I only cut the thing into 4 servings anyway.  So I ate two 2 pieces straight from the oven, then the other 2 pieces later in the evening after it was cold from the frig.

It was so light, fluffy, and moist.  It’s just as good cold as it is warm.  All I needed was a tall glass of freezing ice-cold milk to wash it down.  Ahh, the good life.

So, if you have nothing else to do today, bake away into the day and night to bring smells of gingerbread and pumpkin into your home.  No need to do everything from scratch when you can get the can and box versions in the store and save yourself some time once in a while.

Take-Away Life Lesson:  Your meals of the day should probably consist of more than just pumpkin pie and gingerbread.  Don’t follow my lead folks.  Oops!

  1. Oh, pumpkin pie and gingersnap cookies – you make me hungry for these two favorites of mine! We have ginger and molassea here in egypt, so I might be able to pull off the gingersnaps… but pumpkin? Nobody ever saw that around here! I know where to get ‘ba-tah-tahs’ aka sweet potatoes, tho, its not exactly the same, but might work to satisfy the craving you areto blame for! ;^)

    1. Oh yeah. I’m surprised there’s no pumpkin there. But I make and eat sweet potato pie just the same. It’s just as good.

  2. Duncan Hines used to make a good gingerbread mix, but haven’t seen it in years. I love it from scratch, but never seem to find another use for the leftover molasses. May have to rethink this. You’ve got me tasting it right now.

    1. I’ve never seen the Duncan Hines version before. Bet it’s just a good—but from scratch is probably even better.

      1. This was years ago. It was head and shoulders above the other mixes, which turned out more like a cake. This was more its own texture and had a rich, full-bodied molasses taste. It just screamed out for a bit of lemon sauce. When I made it from scratch, I used a James Beard recipe, which called for sour cream. I still have a couple of boxes of cookbooks to unpack. Not sure where that cookbook is right now. Will try to chase it down. I’ll bet I could Google it up if I tried. ;->

          1. I’ve almost talked myself into doing this. If I get up the gumption to find the recipe and buy the molasses, I’ll surely give a full report.
