Scrambled Eggs with Tomato Bruschetta

Made with Italian bread, extra-virgin olive oil, salt & pepper, tomatoes, fresh basil, butter, eggs, and Pecorino cheese.

This was my first time making my own bruschetta and I absolutely LOVED it!  This recipe also gave me a reason to bust out my grill pan as I hardly ever use it.

I had a good time making the grill marks on the bread.  Then I got to spread all that tomato goodness across the top of it and finally feel all that love inside my mouth as I took my first bite.  Crunch.

And to smell the fresh basil………..ahhhhhhh.

So, if you have nothing else to do today, try making your own bruschetta while having fun making grill marks along the bread.

Take-Away Life Lesson:  Sometimes a grill pan can be more fun than you expect it to be.

  1. Looks like you’ve fancy italian lately, eh. I’ve only loved bruschetta after being in Italy. I probably wouldn’t have the same appreciation of it if I didn’t get there. Yours look so legit.

  2. Okay, this is what I would do…I would scrape the tomatos off the bazil bread onto my wife’s dish, telling her I’m giving these to you because I love you soooooo much, then butter the bazil bread and dig into those scrumteous looking scrambled eggs….I know, I’m encouragable!

    1. You are TOO MUCH! But that’s nice of you to give all your tomatoes away to those less fortunate souls out there.

      1. I know, but, sniff!, it’s the least I can do for those who could use the nutritional value more than myself. Face it. I’m just a giving guy!

  3. those eggs are perfectly cooked! And that’s not an easy task. And yes to fresh basil. Looking forward to using fresh herbs instead of dried again. Agreeing that grill marks are just plain fun 🙂

  4. Sounds delicious! A perfect dish to share with the “good” fresh produce finally making an appearance in markets. And such a beautiful meal paired with the eggs…I would happily eat this for dinner!
