Made with Swai fish fillet and fish seasoning, sweet potatoes with marshmallows, stuffing, greens & spinach with onions, and tartar sauce made with mayonnaise and sweet pickle relish.

So, if you have nothing else to do today, make some good old southern comfort food for yourself.

Take-Away Life Lesson:Β  If you forget to buy tartar sauce, you can always make your own if you have mayonnaise and pickle relish lying around.

  1. What is swai like? I’ve noticed it recently in the grocery. frozen. Living in Boston, we tend to prefer our fish fresh over frozen … but I was curious about this name I’d never heard.

    Is it like tilapia? Which turns me off because the fillets get so stiff after cooking. Plus they can live off sewage. No thanks!

    1. I’m not a fish connoisseur (nor do I know if I spelled that right), but I tried this on a whim. They were in the frozen section of Wal-Mart. And I NEVER buy meat of ANY sort from Wal-Mart. I just don’t trust it coming from there for some reason. But I got a package of them pretty cheap when I passed them by. They weren’t bad. But you know I had to season them down with the fish seasoning and what not. I have to have some flavor. I’m not usually a frozen fish buying girl. I prefer my fish and meat fresh from the health food store actually. (And, ewww, about the sewage. Gross.)

      1. Yes, I read that astronauts who go to Mars will raise and eat tilapia because the fish will thrive on the astronauts’ sewage. I think that every time I see tilapia in the store. Kept me from applying to the Mars space program too! πŸ˜‰

  2. Stuffing is good with a lot of things, not just turkey. You can use the same seasonings and make “stuffing” with a lot of different grains – especially good with wild rice!!
