Don’t ask me why, but I was on a healthy kick today.

So, if you have nothing else to do today, try Mediterranean eating.

Quinoa Salad

Quinoa Salad

Made with quinoa, tomatoes, carrots, sun-dried tomatoes, scallions, minced garlic, sliced almonds, fresh parsley, water, and salt.

Well, I never plan to make this again.  The quinoa just didn’t have the right mix of ingredients to make this taste very swell to me.

Plenty of people may like this just fine, but me?—I’ll pass.

So, if you have nothing else to do today, make a healthy grain quinoa salad that actually tastes good.

Take-Away Life Lesson:  Try different ingredients when making a quinoa salad until you find just the right combination to give you happy taste buds.

Tuna Cakes

Tuna Cakes

Made with tuna, chicken-flavored Stove Top stuffing, cheddar cheese, shredded carrots, mayonnaise, sweet pickle relish, onions, scallions, egg, and water.

These are one of my absolute favorites to eat for a snack.  I could eat these tuna things all day long—and they’re so easy to make.

I actually made this from a combination of two different recipes—one was called Tuna Cakes, the other Tuna Croquettes.

Done in no time.

Take-Away Life Lesson:  Keep your distance from your friends and family while you eat these.  You’ll have tuna breath for a while.
