Food Truck Menu

I heard about and went to a ‘Food Truck Friday’ event in my hometown.  This event was from 5:00-8:00pm.  I didn’t realize the crowd of people that food trucks could bring in.

I’m in line at 5:15 here and finally made it to the order window at 6:00!  We’re talking 45 minutes just for ONE food truck!  Then had to wait 15 more minutes for my order to cook.

To top it all off, by the time I made it to the window to place my order they were completely out of burritos and fish tacos.  I mean, how in the world do you run out of food within 45 minutes of the event starting?  There were only 5 items on the menu to begin with, for Pete’s sake!

And I just happened to get the last two chicken fajita sandwiches.  So now they’re down to selling only two things on their menu—burgers and brats.  And there was still a MASSIVE line behind me!

Those poor people in line could only hope there were burgers and brats left by the time they got to the front of the line.

Food Truck Event

It was ridiculous.  There were food trucks all around the perimeter.  So the thought of standing in another line to try another food truck just didn’t appeal to me after that experience.  I just wanted to head home already.

So, if you have nothing else to do today, try different food trucks in your part of town—just NOT at a food truck event.

Take-Away Life Lesson:  Queuing/Standing in line all day is not an ideal enjoyable outing—especially only to find out there’s not much food left once it’s your turn.

Philly Rice Bowl

Philly Rice Bowl made with steamed white rice, grilled chicken breast, black beans, salsa, sour cream, lettuce, cheese, and grilled vegetables with a side of Tuxedo Fries.

This is that same little local spot where I get my favorite Super Chief Philly Steak Sandwiches all the time.  I finally broke down and tried something new on the menu.

After years of getting the same steak sandwich over and over……hmmm, let’s be bold and try a rice bowl.  ‘Twas a lovely change of pace.  Not a bad bowl at all.

So, if you have nothing else to do today, try a rice bowl at your local steak sandwich restaurant—or just put your own rice bowl together at home.

Take-Away Life Lesson:  You might be pleasantly surprised if you finally break down and try something new on a menu.

Take-Away Life Lesson:  Chicken recipes are some of the most simplest to make.

Cheesy Enchiladas

Made with boneless chicken breasts, black beans, frozen corn, chili powder, salsa, cheddar cheese, and whole-wheat tortillas.

It was an enchilada night.  Deliciosooooooo!

So, if you have nothing else to do today, go all out Mexican on yourself.  It’s so easy.

Take-Away Life Lesson:  Anyone can roll some gunk inside a tortilla and call it an enchilada.

Chicken Teriyaki

Made with diced chicken tenderloins, broccoli, cauliflower, carrots, kale, firm tofu, sliced red onions, celery, mushrooms, yellow onions, sweet Vidalia onions, scallions, bean sprouts, and teriyaki sauce; served over brown rice.

I just loved eating this for dinner and it was all due to the teriyaki sauce.  That sauce can make anything taste yumalicious!

Just put some assorted vegetables inside a pan and throw a bottle of teriyaki sauce all over them.  Yet another way to love life!

Teriyaki Sauce

I discovered this lovely sauce at the health food store, but later found out you can get this exact bottle at Wal-Mart for at least one dollar (if not more) cheaper.

So, if you have nothing else to do today, try throwing some teriyaki sauce over your favorite meats and vegetables and love every minute of it.

Take-Away Life Lesson:  If Wal-Mart is selling the exact product as your local health food store, it’s probably going to be cheaper at a Wal-Mart.

Chicken Tetrazzini & Tuna Noodle Casserole

One can of tuna never does it for me—so, naturally, I use two or more.
