This peach cobbler is oozing with so much love.  I remember the day I had this bowl of sweetness.  It was some time back when I took myself out for breakfast at the Cracker Barrel restaurant—and, oh my, what a treat I gave myself!  I mean, who knew I deserved so much love in my life?

So, if you have nothing else to do today, give yourself a sweet breakfast of your dreams.  It makes no never mind how early in the morning it is.

Take-Away Life Lesson:  Everyone deserves a lot of lovin’ in their lives all day every day.

Time For A Festival

So I took myself to a festival a few weeks ago so I could have some fun and get out of the house.  I have to say I actually enjoyed myself even though I went by myself.

I chose to go bright and early in the morning to this festival and arrived right at opening time.  That’s the best time to go, you know, because there’s not a lot of people everywhere yet.  You know how I roll.

It was fun to people-watch and eat up a storm.  You know how I LOVE food!  Festivals are some of the best places to eat to your heart’s content.  There were food tents everywhere!  I mean, how do you even begin choose?!

My first stop was for potatoes and onions.  They were pretty ‘meh.’  As I sat on a bench eating my bowl of potatoes and onions, I looked up and saw a FUDGE sign through a window that was directly across the street.  Oh, MAN, you know where I headed next!!  A piece of plain chocolate fudge was all I needed.

I later headed towards the carnival area.  You know a carnival is not complete without funnel cakes, cotton candy, and corn dogs.  So, since there was really no place for me to sit, I sat on the street curb and ate a corn dog and funnel cake.

The only thing I was baffled by was why they’d be selling hot chocolate at a carnival when it was almost 100 degrees outside!  Really?!

At some point, I made my way to a COBBLER booth.  No way was I passing that one up.  I chose the pineapple flavored cobbler.  It was to die for.

This was also the first time ever that I stopped at a psychic booth.  I really just did it for grins.  It was only $10 I was losing.  It was hilarious though because the very first thing she told me to do was sit down and take $10 out of my purse, put it into my right hand, and ball up my fist.

Then she proceeded to open my fist and take my money.  I couldn’t stop laughing on the inside because she was being so dramatic about it.  Even I saw that one coming!

I mean, why is she pretending the money in my palm is part of the psychic act of my palm reading—as if the spirits need the money in my hand first for my future to get predicted?  Just take my money and read my palm already!  Who are we really kidding here?

So, if you have nothing else to do today, take yourself to a festival full of fun, food, and laughter—even if you just go by yourself.  You’ll have lots of fun, trust me.

Take-Away Life Lesson:  A psychic is obviously only there to give you a generalization about your future life—not specific details like you’d hope for.  Saying you’ll have “happiness in your future” is something you can probably predict yourself.  In that case—we’re ALL psychic.  But giving detailed dates, times, places, and names of people and things that are going to happen in your future—now that’s a psychic.

A Relaxing Holiday—Somewhat

July 4th barbecue dinner

Ahhh, I love when I can just relax for a whole day or week.  Do whatever, whenever, however.

Well, my day started like any other……..NO, not really!  My goodness—I turn on the TV and there’s a FIRST 48 marathon on one channel along with a TWILIGHT ZONE marathon on another channel.

So NOT like any other day.  I love TV during a holiday!  I live for these marathon days—especially shows I really like.  So my day’s off to a good start!

Next—off to the spa to get my eyebrows ripped.  Yeah, it was open on a major holiday!  WHY?  I don’t know.  It was the ONLY spa/salon open today for some reason.  I was in and out in 5 minutes!

Dashed back home to my telly marathons while I cleaned the ENTIRE house.  Loved that I finally made time to do it!  I can visually see the carpet now!  Now let’s see how long I can keep it looking this way.

Now, what will the food of today bring……Well, I didn’t have to cook today!  Not that I would have minded, but with all the people barbecuing today, all I had to do is pick a place and make a plate.

Peach and Blueberry Cobblers

As you can tell, I just had a basic barbecue dinner with both peach AND blueberry cobbler.  I always say, when you can’t decide between two or more desserts—just get one of each and save yourself the headache of deciding.  That’s how I make it easy on myself.

As for the rest of the evening, I’ve decided to stay indoors this year away from the firecracker madness.  For the most OBVIOUS reason that I prefer to keep my fingers and toes intact today along with the rest of my body parts.  I will be ducking under tables in my home just in case a bottle rocket, bomb, or anything worse makes its way through a window.

After dark, I’ll just be wishing this day would be OVER with already so I can get some sleep in peace and quiet without feeling like I’m in a war zone.

So, if you have nothing else to do today, make sure to grab yourself some good barbecue cooking from everybody’s house you know!  If you get an invite, say YES to everyone, go house-hopping, and then go home and make your own barbecue dinner.

Take-Away Life Lesson:  Always keep both your bomb disposal suit and bullet-proof vest on until the evenings ‘fun’ festivities are over.

Butterscoth Apple Crisp
Butterscotch Apple Crisp

Made with Granny Smith apples, butterscotch chips, light brown sugar, flour, ground cinnamon, ground allspice, juice of a lemon, butter, quick oats, salt, and chopped pecans; served with butter pecan ice cream.

OH – MY – WORD!  Talk about yummy fabulousness!  I absolutely loved this Butterscotch Apple Crisp so much I made it several times over within a matter of weeks.  It’s what I do when I love something and it disappears too quickly.  Now whether it disappearing quickly is my fault alone or several other people’s fault that have shared this with me is up for debate.

But if sweetness isn’t your thing, don’t bother.  It’s yummy sweet!  I always throw in some extra butterscotch chips when I make this.  I mean, the butterscotch combined with the Granny Smith apples and the crispness of it all—oooohhhh, manAnd then to have the nerve to serve it with Butter Pecan Ice Cream—HEAVEN!  Say it with me now.

It’s hard to share something like this when you realize you can only get 2 or 4 slices out of it.  That the pan is a 3-quart 9″ x 13″ is neither here nor there.  It’s all in how you decide to slice it up.

Who came up with what a serving size should look like anyway?  My serving sizes NEVER look the same as what the so-called “experts” say a serving size is.  They really need to rethink that whole thing.

Made with sliced peaches, almond liqueur, nutmeg, brown sugar, corn starch, flour, granulated sugar, salt, baking powder, butter, buttermilk, and egg white.

Moving on to the Peach Cobbler.  Wow!  I loved this, too!  The almond liqueur is what sets it off.  And, as per usual, I could only see getting 2-4 servings out of this at the most.  So share as you see fit.

If you ever need:

  • a way out of a traffic ticket
  • a way to get a man or a woman
  • a discount on your groceries
  • front row concert seats
  • a job promotion
  • free gas refills for your car
  • to prevent someone from shooting you

THIS IS THE WAY TO GO, my peeps!!  Always keep a slice of this peachy bad boy on you for situations such as these and you’re good-to-go!

Made with graham cracker crumbs, melted butter, chopped pecans, butterscotch chips, semisweet chocolate chips, shredded coconut, and sweetened condensed milk.

These Five-Layer Bars were ok to me but I didn’t really want a lot of this.  Kids would probably like it more than I did.  It was good, but not good enough for me to keep the recipe in my permanent recipe binder that I have going.

If a recipe can get a permanent spot in ‘the binder’, it’s doing pretty good—because that means I think it’s fabulous enough to keep and make again one day.

So, if you have nothing else to do today, definitely make yourself some of that Butterscotch Apple Crisp and Peach Cobbler because you’re really missing out on life if you don’t.  (See the links above for the recipes.)  And if that’s not your thing, just head towards the kitchen and make any dessert you’d might like to have or try.  Most importantly, don’t be afraid to keep the whole 9″ x 13″ tray for yourself.

Take-Away Life Lesson:  Where one person sees getting 20 servings out of a dish to serve—another may see only 2 or 3 servings coming out of it.
