Egg Macaroni Salad

Made with elbow noodles, hard-boiled eggs, onion, celery, pickle relish, mayonnaise, Worcestershire sauce, hot sauce, and salt & pepper.

This made SO much macaroni that I had to add MORE of what the rest of the ingredients called for.  There was no way 1/4 cup pickle relish, 3 cups of mayo, the Worcestershire sauce or the amount of pepper called for was going to do ANYTHING for this big bowl of pasta.

I used 2 lbs of pasta like the recipe called for and ended up doubling and tripling the rest of the ingredients so they would flavor and cover the entire bowl of pasta.  I think you just have to keep adding until it’s to your liking or until all the noodles are flavored well.

If I had just put 1/4 cup of relish in that big bowl, it would have been tantamount to not putting pickle relish in it at all!

Made with Velveeta macaroni & cheese, Miracle Whip dressing, milk, celery, red bell pepper, hard-boiled eggs, and green onions.

I tried both of these dishes both warm and cold.  They’re good both ways but I tend to like mine on the warmer side.

So, if you have nothing else to do today, make a huge bowl of macaroni salad and serve it up both hot and cold.

Take-Away Life Lesson:  Don’t always follow recipes to a science if it’s so obvious there needs to be more or less of something added.  Also, take into account recipes could be misprinted as well sometimes.

Grits For Breakfast

Made with cooked grits, sugar, butter, chopped hard-boiled eggs, chopped cooked turkey sausage patties, cheddar cheese, tomato, sour cream, fresh chopped chives, and salt & pepper.

This was a fun spin on eating grits.

Made with course stone-ground white grits, chicken stock, milk, chopped roasted garlic in olive oil, and salt & pepper.

I had never roasted garlic before in my life.  BOY—the smell throughout the house!  Let me tell you!

So, if you have nothing else to do today, try making grits in new and different ways.

Take-Away Life Lesson:  There are many other ways to serve grits other than with the basic butter and sugar you’ve had your whole life.

Scrambled Eggs with Yogurt & Chives
Scrambled Eggs with Yogurt & Chives

Made with eggs, milk, butter, nonfat plain yogurt, fresh sliced chives, and salt & pepper.

This was a recipe from Colin Cowie’s website (but I can no longer find the recipe part of his website).

Recipe for—Scrambled Eggs with Yogurt & Chives (Colin Cowie)
6 eggs
1/4 cup nonfat milk
2 tbsp. butter
2 tbsp. nonfat plain yogurt
2 tbsp. sliced chives
Salt & pepper

Whisk the eggs and milk together in a bowl.  In a large skillet, melt the butter over medium heat.  Pour in the eggs, reduce heat to low and cook, stirring frequently with a wooden spoon until soft curds form.  Stir in the yogurt, chives, salt & pepper and remove from heat.  The eggs should be soft and creamy.

Makes 4 servings.

Cheesy Quiches

Made with sliced mushrooms, onion, frozen chopped spinach, eggs, milk, Miracle Whip, pie shell, and real bacon bits.

This is one of my favorite quiches.  I can literally eat the entire thing myself within 2 days.

Of course I added MORE cheese and MORE bacon bits than what the recipe calls for—it’s what I do.

You probably have to eat 8 of these for just ONE good serving—but who cares?

So, if you have nothing else to do today, make yourself a quiche and do NOT follow the directions to a science.  Throw in extra cheeses and bacon bits and what not for your liking.  You can’t go wrong.

Take-Away Life Lesson:  You can pour an entire bottle of bacon bits into the mixture itself like I did AND put them on the top.  This gave it SO much more flavor than just sprinkling the bits on the top only (like the recipe stated).  Sometimes the recipes don’t know any better than you—so go with your gut.

I’m prepping the ingredients here to add to the baking dish for this delightful Tomato-Basil Bread Pudding.  Look at that mound of fresh cheese!  I always throw in more cheese than what any recipe would call for.  Who are we kidding?
