Made with crispy rice cereal, butter, brown sugar, heavy whipping cream, light corn syrup, flaky sea salt, and marshmallows.

Talk about having some sweetness in your life!  I’m not really big on rice crispy treat dillymajoogle thingies.  I’ve just never been a big fan—even though they’re ok.  But I made these anyway one fine day since I’ve never before made them personally myself.

I loved swirling and watching all the marshmallows melt into the butter and brown sugar mixture.  It was just a lot of gooey goodness.

These actually make a pretty good snack if you need to get your sweet fix for the day.

Take-Away Life Lesson:  Apparently the marshmallow sauce mixture can be used as a substitute for glue should you find yourself in a pinch.

Made with Swai fish fillet and fish seasoning, sweet potatoes with marshmallows, stuffing, greens & spinach with onions, and tartar sauce made with mayonnaise and sweet pickle relish.

So, if you have nothing else to do today, make some good old southern comfort food for yourself.

Take-Away Life Lesson:  If you forget to buy tartar sauce, you can always make your own if you have mayonnaise and pickle relish lying around.

Sweet Potato Love

Candied Sweet Potatoes

Made with fresh sweet potatoes, brown sugar, heavy whipping cream, butter, salt & pepper, nutmeg, cinnamon, ginger, vanilla extract, brandy, and orange zest.

OH, I’ve fallen in love!!  These are the BEST SWEET POTATOES EVER!!  I can’t begin to tell you how delicious these are.  You’ll have to try them for yourselves.

Recipe for—Candied Sweet Potatoes
2 cups firmly packed brown sugar
1 cup heavy whipping cream
4 tbsp unsalted butter
1 tsp kosher salt
1 tsp coarsely ground black pepper
1/2 tsp ground nutmeg
1 tsp ground cinnamon
1/2 tsp ground ginger
1 tbsp vanilla extract
1/4 cup brandy
zest of 1 orange
3 1/2 lbs medium-sized sweet potatoes

Preheat oven to 375 degrees.  Spray a 9 x 13-inch casserole dish with vegetable cooking spray.

In a saucepan, mix the first 8 ingredients with a wooden spoon and cook over medium-low heat.  Cook while whisking gently for 5-7 minutes, until the mixture thickens.  Add the vanilla, brandy, and orange zest.  Cook another minute to thicken further.  Turn off heat, cool slightly; set aside.

Peel and slice sweet potatoes into 1/2-inch circles and arrange in prepared baking dish.  Pour candy sauce over the sweet potatoes, cover with foil, and bake for 40-50 minutes.  Remove foil and bake another 20-30 minutes uncovered until sweet potatoes are fork-tender, basting periodically with sauce.

Makes 8 servings.

I love the crunchy marshmallow topping on this.  I love to peel the browned marshmallows off with my fingers and just eat them.

Made with fresh sweet potatoes, olive oil, red onion, red bell pepper, green onions, chopped garlic cloves, smoked paprika, salt & pepper, and fresh parsley.

So, if you have nothing else to do today, definitely make those LOVELY candied sweet potatoes!  They are to DIE for!!  And make the sweet potato bake if for no other reason than to peel those crispy brown marshmallows off with your hands and pop them in your mouth.  So fun!

Chocolate Love In A Furniture Store?!

Who knew I could find bloody good chocolate in a furniture store!  We have a really nice, ginormous furniture store here where I live that I absolutely love.  So I decided to go ‘window shopping’ briefly for a white, glass dining table.

But when I first opened the door to the store, I could smell chocolate wafting through the store.  OOHHH, MY!  (You can probably guess where this story is gonna go.)  So I look around intently and follow my nose wondering what kind of furniture could possibly smell like chocolate!

AAHHH—THAR SHE BLOWS!!!—just a stone’s throw away from where I was standing.  It’s not furniture, it’s actual chocolate!  I never knew I’d find chocolate goodness inside a furniture store, but I’m not complaining.

So I decided to trek upstairs first to check out the dining table goods.  And, might I say, I found a couple of tables that were totally GORG, totally me!  And I was there all of 5-10 minutes when I trekked back downstairs—and there’s that smell again.  So, obviously, I check out the chocolate candy store.

And, BOY, did I find me some chocolate-covered marshmallow lovin’ where I least expected it—amongst furniture madness.  ‘See’s Candies’ is what it’s called.  I’d never heard of it before, but I just HAD to get at least one chocolate something or other.  And, BOY, that sucker didn’t even make it out of the parking lot/car park!

So, if you have nothing else to do today, go to the biggest furniture store you can find and order yourself massive amounts of chocolate.  And if you don’t smell any tempting flavors as you’re strolling through the store—go ahead and do some furniture ‘window shopping’ and get a wish list going for your future self.  It’s always fun to dream!

Take-Away Life Lesson:  Apparently chocolate melts fast in your hands in 90 degree weather.  Keep a stash of handwipes on standby.
