Potstickers For The New Year

Well my New Year’s resolution to eat a little healthier went right down the drain as soon as I woke up this morning.  The first thing I stuffed in my face for the new year was one of those gigantic plumpalicious cinnamon rolls from the diner—or at least HALF of one.

To be fair, I didn’t buy it today—it was leftover from last night.  So is it still technically my fault?  Should I have known to throw it in the trash at midnight last night?  Isn’t it still considered 2013 food, technically?  I did eat a bowl of oatmeal this morning right afterwards to try to wash it out of my system.

PEOPLE, I’M LOOKING FOR SOME KIND OF CREDIT SOMEWHERE!

Sweet N Sour Sauce

Let’s move on to my non-homemade potstickers-from-a-box.  This is what I resorted to since I spent 90% of my day trying to figure out all aspects of my new camera—so I wasn’t in much of a cooking mood after reading that lengthy instruction manual.  Who knew a wee camera could have 252 pages of instruction on CD to accompany itself?!!

And with some of the pictures I’ve taken today, I swear my cell phone did a much better job.  I’m sure it was user-error and there was probably a setting I should have left well enough alone.  But I’m still in the learning and playing phase with said camera.

Enjoy my first blog photos with the new camera while I still try to get the hang of it.

So, if you have nothing else to do today, spend your day reading a 252-page instruction manual.

Take-Away Life Lesson:  Nothing wrong with breaking a New Year’s resolution a few hours after midnight.  It happens.

Ahhhhh, the cheese melted beautifully.

So, if you have nothing else to do today, try baking spaghetti this time instead of making it the old-fashioned way.

What exactly do you want me to say about this?  Is there something about the picture you’re just not getting?  It speaks loud and clear to me.

Can you imagine a bathtub being layered with this stuff?  If only there was a baking dish the size of a bathtub.  Man, I’d immerse myself and go to town—right in the dead center!  I mean, can you imagine being surrounded by all that good lovin’?

Then again, you have the problem of finding an oven that big.

Made with ground turkey, no-boil lasagna noodles, olive oil, onion, minced garlic cloves, stewed tomatoes, tomato sauce, tomato paste, eggs, cottage cheese, Parmesan cheese, mozzarella cheese, cheddar cheese, fresh parsley, seasoning salt, and salt & pepper.

Now this was a different second lasagna recipe I tried.  This one had a few more ingredients in it than the first one above but was still just as lovely and simple to make.

I was reluctant to make any lasagna at first because I always thought there was so much work involved.  But once I started making it, there really wasn’t anything to it.  It was much simpler and quicker than I thought it’d be.  And if you have someone to help you, it can cut the time down even further.

So, if you have nothing else to do today, find the largest bathtub-sized baking dish you can find and make a big fat lasagna.

Take-Away Life Lesson:  There’s nothing wrong with taking a little cheese bath.

I have never bought or used Swiss chard leaves in my life—so this was a first.  THAT alone was an experiment for me in and of itself.

Have you ever tasted chard?!  Blech!

Made with Swiss chard leaves, cooked lentils, short grain brown rice, goat cheese, fresh chopped garlic, baby arugula, fresh chopped mint, olive oil, and salt & pepper; topped with marinara sauce and Parmesan cheese.

Once the product was actually finished, it was surprisingly edible.  The sauce and cheese really helped GREATLY with the Swiss chard taste that’s for sure!  I’d definitely make this again and it’s great for vegetarians.

So, if you have nothing else to do today, get to know a Swiss chard leaf.  They’re definitely healthy and good for you, but—BLECH!
