Made with Swai fish fillet and fish seasoning, sweet potatoes with marshmallows, stuffing, greens & spinach with onions, and tartar sauce made with mayonnaise and sweet pickle relish.

So, if you have nothing else to do today, make some good old southern comfort food for yourself.

Take-Away Life Lesson:  If you forget to buy tartar sauce, you can always make your own if you have mayonnaise and pickle relish lying around.

Cheesy Quiches

4 Cheese Quiche
Spinach & Cheese Quiche

Made with sliced mushrooms, onion, frozen chopped spinach, eggs, milk, Miracle Whip, pie shell, and real bacon bits.

This is one of my favorite quiches.  I can literally eat the entire thing myself within 2 days.

Of course I added MORE cheese and MORE bacon bits than what the recipe calls for—it’s what I do.

Made with scallions, fresh parsley, eggs, Parmesan cheese, Swiss cheese, milk, and salt & pepper.

You probably have to eat 8 of these for just ONE good serving—but who cares?

Recipe for—Cheesy Crustless Mini Quiches

So, if you have nothing else to do today, make yourself a quiche and do NOT follow the directions to a science.  Throw in extra cheeses and bacon bits and what not for your liking.  You can’t go wrong.

Take-Away Life Lesson:  You can pour an entire bottle of bacon bits into the mixture itself like I did AND put them on the top.  This gave it SO much more flavor than just sprinkling the bits on the top only (like the recipe stated).  Sometimes the recipes don’t know any better than you—so go with your gut.

Sauteed Spinach

Sautéed Spinach made with spinach, turkey bacon, fresh garlic, balsamic vinegar, and salt & pepper.

All these little extras made eating spinach taste so much better than eating it plain.

Recipe for—Sautéed Spinach

Steamed Broccoli, Steamed Squash with seasonings, Steamed Brussels Sprouts with salt & pepper.

I just love my little steamer basket.  You can put it inside any sized pan and make it expand as wide as you need it.  I’ve never had one before and you know how excited I get when I get myself something new to try!

Cabbage

Cabbage made with shredded carrots, lots of butter, and salt & pepper.

This was SO good!  I attribute a lot of it to the massive amounts of buttery goodness.

Sauteed Asparagus, Peppers, & Onions

Sautéed Asparagus, Peppers, & Onions made with asparagus, sliced yellow peppers, sliced red onions, Parmesan & roasted garlic vinaigrette, and topped with Parmesan cheese.

I used canned asparagus in this rather than fresh and I used a slightly different type of vinaigrette—and it was OH SO delicious!

Sauteed Kale

Sautéed Kale made with fresh kale, chopped garlic cloves, and salt & pepper.

I just love kale made this way.

So, if you have nothing else to do today, get to know your vegetables and play around with them a little.  Buy yourself a steamer basket, too—you’ll love it!

Take-Away Life Lesson:  Vegetables taste SO much better when you can season and doctor them up just the way you like.
