Scrambled Eggs with Tomato Bruschetta

Made with Italian bread, extra-virgin olive oil, salt & pepper, tomatoes, fresh basil, butter, eggs, and Pecorino cheese.

This was my first time making my own bruschetta and I absolutely LOVED it!  This recipe also gave me a reason to bust out my grill pan as I hardly ever use it.

I had a good time making the grill marks on the bread.  Then I got to spread all that tomato goodness across the top of it and finally feel all that love inside my mouth as I took my first bite.  Crunch.

And to smell the fresh basil………..ahhhhhhh.

Yeah, yeah, I know—another pasta dish.  What can I say?

So, if you have nothing else to do today, slop together another pasta dish for the umpteenth time.

Take-Away Life Lesson:  You can never have too much pasta in your life.  Live, love, and enjoy life with pasta.

Lemon-Garlic Cream Fettuccine

Lemon-Garlic Fettuccine

Made with lemon peel, fresh parsley, minced garlic cloves, fettuccine, butter, onion, heavy whipping cream, salt & pepper, cream cheese, lemon juice, plum tomatoes, and Parmesan cheese.

I had my reservations about making another “Taste of Home” recipe, but this little pasta dish actually turned out rather good.  Previous dishes I’ve chosen to make from “Taste of Home” weren’t much to write home about, but I decided to give it another try.

This was full of creaminess that covered each and every noodle.  You can really taste the lemon and garlic in this dish.  Adding Parmesan cheese on top is just the way to finish it off.  I made plenty of this stuff so I’m set for lunch/dinner for the next few days.

So, if you have nothing else to do today, make yourself a fabulous noodle dish full of creamy goodness—and don’t forget to load it with lemon and garlic.  The flavors are marvelous.

Italian Turkey Meatballs

Turkey Meatballs

Made with breadcrumbs, Parmesan cheese, fresh basil, fresh parsley, milk, ketchup, tomato paste, salt & pepper, eggs, minced garlic cloves, onion, ground dark turkey meat, Italian turkey sausage, and extra-virgin olive oil.

Sauce made with extra-virgin olive oil, smashed garlic cloves, onion, salt & pepper, fresh basil, ground fennel seeds, dried oregano, and crushed tomatoes.

It was a meatball dinner night! And, ohhhhh, how I could taste the fennel and oregano in the sauce mixture.  So spot on.

I believe a good-sized meatball should be no smaller than the size of a baseball—but if you must go smaller, no smaller than a golf ball.

I imagine these meatballs would be good loaded on top of some spaghetti just the same as straight for dinner by themselves.  The recipe did not call for making a pasta dish, so straight down my pipe they went as is.

So, if you have nothing else to do today, make some good time meatballs for dinner anyway you like them.

Take-Away Life Lesson:  No need to make tiny-sized meatballs when you can make them the size of a bowling ball from the onset.

Cherry Tomato Salad

Tomato Salad

Made with romaine lettuce, red grape tomatoes, red onion, olive oil, balsamic vinegar, fresh parsley, jarred pesto, sugar, minced garlic clove, salt & pepper, and Parmesan cheese.

So I decided to make myself a salad.  I liked this salad a lot—and it was actually the homemade tomato dressing that won me over.

I loved how I was able to throw all the ingredients into a plastic zipper bag, let everything marinate, and then throw it all on top of lettuce leaves as the dressing.  Too simple.  And how delicious it was.

The recipe called for a mix of red and yellow grape tomatoes, but I could only find red—so I doubled up on the red ones.  Needless to say, it would have been a little more colorful if I had found the yellow tomatoes, too.

I added twice as much pesto because I just loved the flavor of the pesto.  Then, of course, I topped my salad with a sprinkling of Parmesan cheese of which the recipe does not call for at all.

I will definitely be making this scrumptious salad again soon.

So, if you have nothing else to do today, make yourself a fabulously healthy tomato salad with the goodness of a homemade marinated dressing.

Take-Away Life Lesson:  Homemade salad dressings are hands-down so much better than the store-bought stuff.

Hand-Cut French Fries with honey Dijon and ketchup.

Here was the highlight of my day today—FOOD at Houston’s!  I started off with a fabulous appetizer of none other than fries.  These put a smile on my face all on their own.

Club Salad made with crispy chicken, smokehouse bacon,  avocado, egg, and tomato with buttermilk garlic dressing.

Five minutes later, there’s my club salad looking lovely as always.  Naturally, I always have to ask for an extra side of dressing.  The amount of dressing they put on the salad just doesn’t cut it for me.  I need it loaded with a blanket of that creamy goodness.

So, if you have nothing else to do today, eat fabulously at a place whose food always puts a smile on your face.

Take-Away Life Lesson:  It’s the little things in life that can make your day.

Ahhhhh, the cheese melted beautifully.
